This cookbook is filled with extras! Some of our favorites are the Cooking
Tips and Helpful Hints by Elaine Kay, Cooking Methods and Times
for Fruits and Vegetables, Calorie Counts and there is a special
section to acquaint yourself with Herbs and Spices.
|
And the
all time favorite section is the Ethnic recipes. Elaine Kay reveals long
held
family recipes.
Here is just a few: |
| Hummus, Leban, Baba Ghanoosh, Tabbouleh, Grape Leaf Rolls,
Kibba, Meat Pies, Spinach Pies, Rice Pudding and Baklava Rolls just to
name a few most desired. |
| |
 |
Three large stalks of celery, chopped and added to about two cups of
beans (navy, brown, pinto, etc) will make them easier to digest. |
| |
 |
To keep hot
oil from splattering, sprinkle a little salt or flour in the pan before
frying. |
| |
 |
When baking
bread, a small dish of water in the oven will help keep the crust from
getting too hard or brown. |
| |
 |
To slice meat
into thin strips, as for stir-fry dishes, partially freeze it so it will
slice more easily. |
